THANKSGIVING

This post is a dedication to God. It should be way longer, but I just a few things I want to say now! God is so good and kind to have answered my prayer! Over the past two years in JC, I have failing math repeatedly and I think I only passed twice (once in promos and once in a class test). You have to get a grade 4 to pass, so technically I passed in prelims too. My score was 49 marks though, so I seriously dont consider that a pass lah! 

During the last month of preparing for IB, doing practices and in the exam hall, I kept telling God that I only want a grade 6. "Please God, please bless me with a grade 6." I collected my results breakdown yesterday and I saw that I got a grade 6 with a score of 68 marks, which is really at the edge of the boundary.. Wah... God is so good to me!!!! He really answered my prayer!!!! He is good to His children. Thank you Lord for Your grace and goodness for remembering my prayer T_T T_T I am sooooooo happy. Math has been difficult, but my God is even greater *hearts* All Glory to God !!! He has been faithful to me. 

Also remembered that God answered my prayer too regarding my overall score. "Can get into the course that is God's will and above 40 points." AH... Really must give thanks :DD Thank you for loving me, God! 

Baking adventures with Char

Recently, it has been a goal of mine to be more proficient in culinary skills!!! Like baking and cooking and all!!! So far the things I've baked have been not very good T_T I went to bake again this monday after a friend in my mum's cell group sent me a recipe for muffins, which she claims is delicious and idiot-proof! Here I come! 
 Making!! Which looked very promising! I went out to buy the cupcake mould and the electronic balance! Ever since I got the electric balance, my baking has great improved! I can tell! Because last time it was so fail and now, even when I mixed up the steps, they were still edibleee
 Good lookin' muffins. Haha they were actually not very deep, there's a huge space in the cupcake holder heh! I will put more baking powder in future! Cinnamon makes the muffin smell sooo gooood.
Just going to attach the recipe here, for my own future reference as wellll! :-D Even people who are not terrific at baking can probably make this if you put in the correct proportions!

Banana Muffins Recipe:

1 cup (115 grams) walnuts or pecans

1 3/4 cups (230 grams) all-purpose flour

3/4 cup (150 grams) granulated white sugar

1 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

2 large eggs, lightly beaten

1/2 cup (113 grams) unsalted butter, melted and cooled

3 ripe large bananas (approximately 1 pound or 454 grams), mashed well (about 1-1/2 cups)

1 teaspoon pure vanilla extract

Instructions:

Banana Muffins: Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle of the oven. Line a 12 - 1/2 cup muffin pan with paper liners or butter or spray with a non stick spray.

Place the nuts on a baking sheet and bake for about 8 to 10 minutes or until lightly toasted. Let cool and then chop coarsely.

In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts.

In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. With a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.) Spoon the batter into the prepared muffin tins. Bake about 20 - 25 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan. Serve warm or at room temperature.

Makes 12 regular sized muffin

 The second time I baked with Bella, who is a new friend I made at st lukes!!! :-) hehehe. We wanted to make vanilla cupcakes with a surprise! We switched the m&ms to ferroro rocher which I had in my fridge :) Which makes me want to eat it now EHHEEH. After baking and before frosting! WAHH. We really thought it was gonna fail, because we messed up the steps and the batter was so runny like soup! The ferroro rocher came up really well at the top, looks yummy!!
 FIRST TIME IN MY LIFE I SUCCEEDED IN FROSTING. Ahh. Okay it was not the fluffy type I expected, but at least it had some hold and we decorated with sprinkles!!! :-))) We gave it to some of our friends too. It was so nice and fun to bake with a friend! Bella actually knows her stuff haha.

Enjoyed salted caramel frappe the other day. I know in all things we can't really prove to God our faithfulness because we keep failing. Rather, we can always trust in God because He never fails :)
